BBQ Chicken Bake Recipe

Almost everybody loves BBQ chicken. There are dozens of ways to make it, and dozens of different sauces. Some recipes are grilled; others are baked. However, the following BBQ Chicken Bake is made in one dish and is easy and delicious. You can use your favorite BBQ seasoning in this casserole, as well as your favorite BBQ sauce. One of the things that sets this dish apart from many recipes is that it contains lots of cheese and a crunchy topping.

If you have time, this goes well with white rice (quickly made in the Instant Pot), or crusty garlic bread. It can be made ahead and refrigerated before baking (it will take longer to bake). Make sure you add the French fried onions during the last 15 minutes of baking to keep them crisp without burning.
8 Servings
1/2 pound thick sliced bacon, chopped
2 pounds boneless skinless chicken breast halves, trimmed of any fat, veins, etc., and cut into 1/2" dice
1 teaspoon BBQ Seasoning, (your favorite - either spicy or not)
1/2 cup sour cream
1 cup barbecue sauce, (your favorite either spicy or not)
1 bunch green onion, sliced
2 cups grated sharp cheddar cheese
1 cup French fried onions

- Preheat oven to 350°.
- Cook the bacon until crisp in a large skillet. Remove the bacon to drain.
- Add the chicken to the bacon fat, sprinkle with barbecue seasoning, and stir over medium-high heat until the chicken pieces turn white and are barely cooked through.
- Mix the sour cream, barbecue sauce, and green onion; stir in the drained bacon and cooked chicken.
- Pour half of the mixture into a shallow 9" x 13" glass baking dish. Sprinkle with half of the cheese. Spread the remaining chicken mixture over the cheese and top with the remaining cheese.
- Bake 30 minutes or until bubbly. Remove from the oven, sprinkle with the French fried onions, and bake 15 additional minutes. <.li>
